2017 Estate Sauvignon Blanc Reserve
Our Reserve Sauvignon Blanc began when we had the idea of aging certain blocks of our Estate Blanc for an extended time in large-format, French oak barrels. We were fortunate to have the opportunity to work with the cooper (barrel maker) Atelier Centre France (ACF) of the Sancerre region in France. ACF is perhaps best known for being the cooper for the famed Domaine Didier Dagueneau in the Loire Valley. After tasting through several vintages of Sauvignon Blanc, the teams at ACF and Arkenstone decided on large, 600-liter barrels with 40-millimeter staves compared to 225-liter barrels traditionally used. The barrels are toasted slowly over low heat making this the perfect complement for our reserve Blanc.
We carefully select the grapes that go into our Reserve Sauvignon Blanc at the time of harvest. As the fruit comes in, we evaluate and single out only the blocks that we believe have the proper balance of ripeness and acidity to thrive with an extra year in wood. The pressed juice is fermented and aged for two years in barrel before being racked and bottled. We then bottle age until we feel the wine is ready to send out.
